Honey Dijon Chicken Breasts with Mozzarella

Easy to do and tasty too - with a jacket potato and salad :)

1/2 cup honey
1/4 cup + 1 tbsp grainy Dijon mustard
1/4 cup of mayonnaise
4 skinless boneless chicken breasts
1 cup shredded mozzarella

1. Pre heat oven to 375°F / Fan 160.
2. Combine honey, Dijon mustard and mayonnaise using a whisk.
3. Line chicken breasts up in a foiled baking dish and cover them with the sauce.
4. Using a spoon move the sauce around so that it's completely covering the chicken.
5. Sprinkle the top with mozzarella.
6. Bake in oven for 50 mins to 1 hour. Cheese on top should be golden brown,

Lemon Yogurt Cakes

I made a Lemon & Blueberry Yogurt cake in a loaf tin - the spare batter made these four cakes which I cooked for 17 minutes and decorated with lemon butter cream. Recipe below is for the main loaf cake although you could probably make it all as lemon cakes without the blueberries.



1 cup plain greek yogurt
1/2 cup vegetable oil
1 cup sugar
1 1/2 cups flour
2 teaspoons baking powder
3 large eggs
2 teaspoons grated lemon zest (2 lemons)
1 teaspoon pure vanilla extract
1 1/2 cups blueberries
1/3 cup freshly squeezed lemon juice

For the Lemon Glaze:
1 cups confectioners’ sugar, sifted
2 to 3 tablespoons fresh lemon juice

Preheat Oven to 350
In a large mixing bowl mix yogurt, oil and sugar
Add in eggs, vanilla and mix till combined
Add in lemon juice and zest
Slowly add flour and baking powder
Stir in blueberries

Pour into greased loaf tin and bake 35-45 minutes or until done

I made the icing quite thick and spread on the cake while warm unlike the recipe picture which has a thin glaze.

Cheeseburger Pie

All the ingredients for a classic cheeseburger in a pie - was lovely with a green salad and fruit salsa.


I halved the recipe for two of us but thought it was far too much meat so still did both eggs and 1/2 cup mayonnaise.

1 lb lean mince beef
1/2 large onion, chopped
Salt & pepper
2 tbsp Tomato ketchup
1 tbsp worcestershire sauce
2 gherkin finely chopped
2 eggs
½ cup mayonnaise
2 tbsp milk
8oz shredded Cheddar cheese

Brown mince beef and when done add chopped onion for a few minutes.
Mix in a little salt and pepper.
Stir in gherkin, ketchup and worcestershire sauce.
Dump meat mixture into a pie pan or any oven safe dish.
Whisk together the mayonnaise, milk and eggs. 
Pour over meat mixture and top with a cheese.
Bake at 350 degrees / Fan 160 for 25-30 minutes or until bubbling. 
Take out of oven and let stand for 5 minutes before serving.

Chocolate Mint Cake

Icing is very soft so would probably add less milk next time



5 oz SR Flour
2 oz Butter
3 oz Soft Brown Sugar
2 Eggs Beaten
2 oz Plain Chocolate
3 fl oz Milk

12 oz Icing Sugar
3 oz Butter
4-5 tbsp Milk
2 tsp peppermint flavoring
Green Food coloring
Plain Chocolate


Heat oven Gas 4/ Fan150
Melt chocolate in milk
Beat butter and sugar till fluffy
Add eggs and flour
Stir in chocolate
Pour into lined loaf tin
Cook for 30 minutes or till a skewer comes out clean
Allow to cool before icing

Mix all ingredients for icing except chocolate
Put icing inside and on top of cake
Decorate with bits from a bar of plain chocolate

Pasta Spagbol

A pasta dish like spaghetti bolonaise but without the eating hassle. Serves 2.


130 g Pasta Spirals
250 g lean mince
1/2 white onion chopped
1/2 can chopped tomatoes
2 tbsp tomato ketchup
Dash of Worcestershire sauce
1/4 pint Beef Stock - I used an oxo
1/4 pint red wine
4 mushrooms sliced
Salt & Pepper

1. Cook pasta till al dente
2. Brown mince then add onion and fry 3 minutes
3. Add ketchup, sauce, salt & pepper and tomatoes and cook 2 minutes
4. Add mushrooms and stock cook 5 minutes
5. Add pasta and cook 5 minutes until sauce reduced

Reuben Pasty

Found this on Pinterest and just tweaked it a bit to use coleslaw and mustard instead of sauerkrat; This amount makes 4 pasties


8 slices of corned beef
English Mustard
4 slices Swiss Cheese - I used emmental
Coleslaw
Block of Puff Pastry

Cut pastry into 4 and roll each bit out to 2x slightly larger than corned beef
Spread English mustard on one half of pastry
Top with 2 slices of CB
Layer coleslaw on top
Add slice of cheese
Wet edges of pastry and fold over sealing with finger edge
Egg wash top and cut air holes in center
Bake in Oven Fan 200 for 15-20 minutes until golden
